Le Contesse Spumante Cuvée Extra Dry (11%)

Le Contesse Spumante Cuvée Extra Dry is an Italian sparkling wine made mainly from Glera, with other local grapes from Veneto and Friuli. The must settles naturally after a gentle pressing, and most of it is fermented in steel tanks. The wine is then blended with a little unfermented must kept cool, and the second fermentation takes place in pressure tanks with selected yeast. It is pale straw in colour, with a lively mousse and fine, persistent bubbles. Floral and fruity, crisp notes sit together on the nose and palate, and good acidity keeps the exotic, sweeter tones in check. It suits an aperitif, or shellfish, fish and poultry.
