A wine from Raccaro, made with gentle pressing using a bladder press, followed by cold settling of the must before fermentation at a controlled temperature of 18/19°C. It has an intense and characteristic aroma with spicy notes of pepper and salt and strong mineral notes. The wine is marked by great sapidity, with its natural alcohol harmonising with the acidity. It pairs well with fish dishes, pasta, risottos and shellfish, roasted or salt-baked.
