Metté Bourgeons de Sapin Eau de Vie (50cl)

Metté Bourgeons de Sapin is an Alsace eau de vie made at the Distillerie Metté in Ribeauvillé, in a 50cl bottle. Young fir buds are picked at the end of spring and macerated in a wine eau de vie, then distilled once in copper pot stills. The spirit rests for at least a year in stainless steel tanks, which refines the aromas while keeping it fresh. The nose is resinous and lemony, and the palate brings pine with fine touches of mint and a little citron. The finish is long, carrying on the green, resinous notes. It is served neat at about 13°C in a tulip glass, as a digestif.
