Milam & Greene Wildlife Single Barrel Cardinal (75cl, 64.9%)

This is a single barrel bourbon from Milam & Greene, bottled at 64.9% ABV in a 75cl bottle. It is the Cardinal release in the Wildlife series, named after the cardinals that pass through the distillery property as they migrate north and south. The whiskey aged through prolonged dry heat and a couple of extreme cold snaps, which affected both how it matured and the yield from the barrel. Its colour is mahogany. The nose offers honey, vanilla wafers, cherry cordial and marshmallow fluff. The palate is creamy and sweet, with pecan sandies, creamed corn, cornbread and baking spices. The finish is long, with black pepper and eucalyptus.
