Mosgaard – Pedro Ximenez Single Malt Whisky (50cl, 47.5%)

Mosgaard Pedro Ximenez is an organic Danish single malt, bottled at 47.5% ABV in a 50cl bottle. It is made from organically grown Danish barley malt and distilled twice, slowly, in a custom-built copper pot still. The whisky matures first in small new French oak casks, then spends a further year to eighteen months in specially built casks that previously held Pedro Ximenez sherry. The small casks bring more contact with the wood, so maturation is quicker, and the two woods balance tannin with sweet sherry notes. Tasting notes mention malt, coffee, leather, chocolate, citrus, apples and dried fruit.
