Old Elk Sherry Cask Finish is a bourbon from Fort Collins, Colorado, bottled at 54.85% ABV in a 75cl bottle. It is aged for a minimum of five years in new American oak, then finished in Oloroso sherry casks.
The mash bill is 51% corn, 34% malted barley and 15% rye, the high-malt recipe that Old Elk uses as its signature. Master Distiller Greg Metze made the whiskey, and Melinda Maddox handled the blending and finishing. Water is added slowly over several weeks to bring it down to strength.
The nose is sweet and full, with dried fruit, caramel and a floral lift. The palate begins with dried stone fruit, followed by caramel and rye spice. The finish is long, with nuts, vanilla bread pudding and spiced cocoa.
