Old Man Winter Cask Strength is an American bourbon made by Preservation Distillery + Farm in Bardstown, Kentucky. It is a blend of Kentucky and Indiana bourbons, including pot-still-style bourbon from Preservation, bottled at cask strength, 58.9% ABV, without dilution or chill filtration. On the nose there is caramel, vanilla and toasted oak, with apricot, stone fruit, cinnamon and clove. The palate is full-bodied and silky, with caramelised sugar, honeyed fruit and a little rye spice. The finish is long and warming, with vanilla, oak and a gentle dryness.
