Very Olde St. Nick Faith + Conviction is a cask strength Ancient Cask rye from Preservation Distillery + Farm in Bardstown, Kentucky. It is bottled at 54.6% (109.2 proof) in a 75cl bottle. It is built on a base of rye whiskey about eight years old, profiled with a handful of vintage casks, and made in a batch of one to three barrels. Deep amber in colour, the nose shows red currant, ripe plum, brown butter, light apricot and cola over warm oak. The palate has black raspberry, raisin and prune, with rye spice and a light chocolate wafer note. The finish is rich, with milk chocolate, leather, hazelnut and molasses.
