Old Pepper Finest Kentucky Oak is a straight bourbon from James Pepper Distilling, given a second finish in heavily toasted barrels.
Those barrels are made from Finest Kentucky Oak staves, air-seasoned for 18 to 24 months rather than the six months usual for a whiskey barrel. The extra seasoning releases more flavour from the oak into the already matured bourbon, giving a full-bodied and complex whisky.
It is bottled straight from the barrel, uncut and unfiltered.
