Penelope Toasted Barrel Finish is an Indiana straight bourbon bottled at 100 proof (50% ABV) in a 75cl bottle.
The bourbon is fully matured in charred new American oak barrels, then finished in a new, hand-toasted barrel. The toasting adds deep notes of vanilla to the house flavour profile.
The nose is brown sugar and a cinnamon breakfast pastry. The palate shows smooth caramel syrup, brown sugar, subtle barrel char and hints of butterscotch and creme brulee, with vanilla, graham cracker and a touch of dried cherry. The finish is roasted marshmallow with a slight spice.
