Quechol Sotol Texanum (75cl, 46.3%)

A sotol made entirely from Dasylirion texanum, harvested from the Chihuahuan Desert in Durango. The plants are wild-harvested and take roughly 15 years to mature, with piñas averaging 110 to 130 pounds at harvest. Each bottle is made in small batches using traditional techniques passed down through generations of sotoleros. Tasting notes include mild, grassy aromas leading into a bright, vegetal palate with fresh-cut grass, bell pepper and dill, finishing brisk and crisp with a saline exhale. Other notes describe black licorice, roasted nuts, ancho chile, cooked caramel, spearmint and jalapeño, with a spicy, lingering finish.
