Queirolo Acholado is a Peruvian pisco made from a blend of Italia, Quebranta, Negra Criolla and Moscatel grapes. It comes in a 70cl bottle.
The pisco is produced at the Pachacamac distillery in the province of Lima. Fermentation uses natural yeasts at a controlled temperature of around 22°C, distillation is in Charentais-type stills of French design, and the spirit rests in stainless steel tanks. The Queirolo family, who came from Genoa, founded their cellar in Lima in 1880.
On the palate, white flowers, figs and prunes lead. It can be drunk neat or mixed, and suits a Pisco Sour.
