Rabbit Hole – Cavehill Bourbon (75cl, 47.5%)

Rabbit Hole Cavehill is a Kentucky straight bourbon from Louisville, in a 750ml bottle at 47.5% ABV. It carries no age statement. The mash bill uses four grains, three of them malted: 70% corn, 10% malted wheat, 10% honey malted barley and 10% malted barley. It is blended in small batches of no more than 15 barrels and aged in American white oak from Kelvin Cooperage, toasted over a wood fire and then charred. The name nods to Cave Hill Cemetery in Louisville. The nose brings spice, honey and fresh apple. On the palate come orange, honey, mint and toasted grain, followed by a finish of vanilla and custard.
