Rabbit Hole Cavehill is a four-grain Kentucky straight bourbon from the Rabbit Hole Distillery in Louisville, bottled at 47.5% ABV in a 750ml bottle. The mashbill is 70% corn, 10% malted wheat, 10% honey malted barley and 10% malted barley, so every secondary grain is malted. It matures in toasted and charred American white oak and is blended from small batches of no more than 15 barrels.
The nose opens with honey, vanilla, toasted grain and baking spice, with caramel, toasted marshmallow and a delicate citrus-floral note. The palate brings honey, creamy orange, vanilla custard, fresh bread and cinnamon sugar. The finish is medium to long, with black pepper, toasted oak, vanilla and a faint trace of smoke.
