Rabbit Hole Heigold is a Kentucky straight bourbon from Rabbit Hole Distillery in Louisville, aged four years and bottled at 47.5% ABV in a 75cl bottle.
The mashbill is 70% corn, 25% malted rye and 5% malted barley. The spirit goes into the barrel at 110 proof, and the American white oak barrels are toasted over a wood-fired flame for up to 20 minutes before charring.
The nose brings citrus and baking spice, then caramel, vanilla and toasted oak. Butterscotch and brown sugar open the palate, followed by malted rye spice and citrus zest. The finish is medium-long, with burnt oak and pepper giving way to butterscotch.
