Rare Stash Bourbon #2, from Dustin Poirier, is a blend of 8.5 and 7.5 year old straight bourbons from Tennessee and Indiana. The older whiskey was aged in Char #4 white oak barrels and the younger in Char #3, both from a 75/21/4 mash bill. It is bottled at 91 proof, which is 45.5% ABV.
The nose is rich and slightly sweet, with vanilla, oak and caramel. Vanilla, butterscotch, oak and a hint of chocolate show on the palate, followed by a soothing warmth that lingers.
