Redemption Sur Lee Straight Rye Whiskey (75cl)

This is a straight rye whiskey from Redemption, made from a high rye mash bill. It is finished with a method borrowed from winemaking, in which the whiskey rests for an extended time on spent yeast lees. The lees finish is said to add a richer mouthfeel, some softness and subtle savoury notes, while the rye keeps its spice. The nose brings baking spice, toasted grain, dried citrus peel and light herbal notes. On the palate there is rye spice, caramelised sugar, a hint of bread, soft oak and gentle vanilla. The finish is medium to long, with warming spice and lingering grain sweetness.
