Saint Liberty Mary's Four Grain Straight Bourbon

Mary's is a straight bourbon from Saint Liberty Whiskey, made from four grains: 65% local corn, 22% wheat, 10% rye and 3% malted barley. It was distilled in Texas, just outside Austin, then proofed and bottled in Colorado with water from the Crystal River. The whiskey was matured for a minimum of four years in 53-gallon barrels with a number 3 char. On the nose there is caramelised vanilla, dried apricot and a hint of allspice. The palate brings cinnamon, brown sugar, black tea, clove and sweet charred oak, with a touch of butterscotch leading into a creamy finish.
