Savage & Cooke – Bloody Butcher Bottled-in-Bond Bourbon (75cl, 50%)

Savage & Cooke Bloody Butcher is a bottled-in-bond bourbon at 50% ABV, in a 75cl bottle. The grain was grown on a plot in Winters, California, about 35 miles from the distillery. The mash bill is 70% Bloody Butcher heirloom corn, 16% red winter wheat and 14% malted barley, and every stage from growing to maturation was handled in-house. It matured in Seguin Moreau char #3 barrels, which add toasty oak and vanilla. A total of 44 barrels were produced. In the glass it is deep caramel with an orange hue. Ground cinnamon, dried orange peel and lilac blossom lead on the nose, and the long finish brings cherry with pronounced minerality.
