This is a small-set bourbon from Savage & Cooke, the distillery on Mare Island in California, founded in 2016 by the winemaker Dave Phinney, who is also behind The Prisoner and Orin Swift. It was distilled and finished at the former Mare Island naval shipyard, with a wine-minded approach to sourcing and finishing. The nose has brown sugar, caramel, butterscotch and toasty oak. The palate is smooth and lush, with vanilla bean, baking spices, maple and baked apples.
