Paragon is a wheated straight bourbon from Southern Distilling Company in Statesville, North Carolina, bottled in bond at 50% ABV in a 750ml bottle. The distillery was founded in 2013 by Pete and Vienna Barger.
It was made in one distilling season by one distiller at one distillery, then aged for at least four years in a bonded warehouse. The mash bill is 70% corn, 16% wheat and 14% barley, with wheat taking the place of rye for a softer character.
Sweet corn, honey and light oak show on the nose. The palate brings caramel, vanilla custard and soft wheat bread, and the finish is clean and warming, with oak and a faint pepper note.
