Takamine 8 Year Old Japanese Whisky

Takamine 8 Year Old is a Japanese whisky from Shinozaki Brewery & Distillery, a company with more than 200 years of experience as sake makers. It is made by the patented Takamine Process. Instead of malting barley, the distillers use koji, a traditional Japanese mould, to turn starch into sugar. Koji and yeast work side by side in a multiple parallel fermentation. The method goes back to the scientist Jokichi Takamine, who experimented with growing koji spores on barley to make a maltless whiskey.
