Takamine Japanese Whiskey Sakura Cask

A Japanese koji whisky from Takamine, bottled in the Sakura Cask expression. Takamine is made with the patented Takamine Process. Koji, an ancient Japanese mould, converts starches to sugars in a way similar to malting barley. The koji and the yeast work at the same time in a multiple parallel fermentation, rather than the yeast being added after a warm water mash. The whisky is made by Shinozaki Brewery & Distillery, whose sake makers have over 200 years of experience with koji.
