Volar is an English single malt distilled by The Lakes Distillery near Bassenthwaite Lake in Cumbria. It is a limited release in The Whiskymaker's Editions series, named after the Spanish word for 'to fly' and inspired by eagles soaring over Spain's Cantabrian Mountains.
The whisky is aged in two kinds of cask, Spanish mountain wine casks and bespoke sherry casks. It is bottled at 52% ABV, non-chill filtered and at natural colour.
On the nose are berry compote, dates and dried figs, with sweet wood spice, orange oil and a floral note. The palate offers dark cherry jam, candied citrus peel and medjool dates, moving to nutmeg, dark cocoa and oak tannins. The finish is long and warming, with dark fruit and black tea.
