A no-age-statement single malt from The Macallan in Speyside, bottled at 46.8% in a 70cl bottle. This is the Hong Kong edition of Distil Your World, created in collaboration with Joan, Josep and Jordi Roca of El Celler de Can Roca in Girona, Spain.
The Roca brothers spent time in the city's food culture, street markets and traditions, then turned those impressions into a recipe vatted from six cask types, among them sherry-seasoned European oak hogsheads, ex-bourbon casks and sherry-seasoned American oak casks.
The nose is sweet soy glaze, toasted sesame and fresh ginger, with dried fruit and citrus peel. The palate brings umami depth, dark chocolate and charred pineapple, and the finish is long and warming, with sherry sweetness and herbal tea.
