The Macallan – Harmony Collection Rich Cacao 2021 (75cl, 44%)

The Macallan Harmony Collection Rich Cacao is a Speyside single malt, the first release in The Macallan's annual Harmony Collection. Made in 2021 with Jordi Roca, pastry chef of El Celler de Can Roca, it was inspired by fine chocolate. It is bottled at 44% (88 proof) in a 750ml bottle, with natural colour. Whisky Maker Polly Logan found a chocolate note in sherry-seasoned European oak casks and balanced it with the vanilla sweetness of sherry-seasoned American oak. The box is recyclable and biodegradable, made from discarded cacao pod husks. It is described as toasted cacao in colour, with chocolate fondant, honey, oak, lime and ginger on the nose. The palate brings dark chocolate, honey, dates, vanilla and cinnamon, and the finish is long with rich chocolate.
