The Macallan Sherry Cask is the third chapter in the TIME : SPACE Collection, a 20 year old Speyside single malt bottled at 44.8%. It is the first Macallan influenced by sherry casks seasoned with the distillery's own Valdespino sherry.
The whisky matured first in sherry seasoned oak casks at The Macallan Estate, then spent a further marrying period in a selection of the first 200 casks seasoned in the Valdespino bodega. Those casks arrived in 2024 as part of the distillery's 200th anniversary celebrations.
The nose offers sherry-soaked raisins, figs, Medjool dates and dark chocolate truffles. The palate has dried fruits, ginger cake and treacle toffee, and the finish brings warming wood spices, a hint of espresso and gentle oak.
