The Macallan TIME : SPACE Sherry Cask is a 20-year-old Speyside single malt and the third chapter in The Macallan's TIME : SPACE Collection. It is bottled at 44.8% with natural colour, in a 70cl bottle.
It is the first Macallan influenced by casks seasoned with the distillery's own Valdespino sherry. The whisky matured mainly in European oak sherry-seasoned casks with a touch of American oak, then spent a marrying period in some of the first 200 casks made in The Macallan's own cooperages. These were seasoned in Jerez de la Frontera and filled in 2024, the distillery's 200th anniversary year.
The nose has sherry-soaked raisins, figs and Medjool dates over cinder toffee and dark chocolate. Dried fruit, dark chocolate and sweet oak lead the palate, and the finish is long and warming, with wood spice and a hint of espresso.
