The Woodpecker & The Leprechaun Applewood Finish is an Irish single malt from Great Northern Distillery in Dundalk, triple distilled in May 2017. It matured for five years in first-fill ex-bourbon casks, then part of it spent twelve months from February 2023 in a handmade 50-litre cask of fresh applewood. Bottled in February 2024 at a cask strength of 56.6% ABV, without colouring or chill-filtration, it made 64 bottles of 50cl.
It belongs to a series studying how different woods affect the same base whiskey, selected and bottled independently by Sebastian Büssing of The Spirits Alchemist.
The nose is green wood, vanilla and oats with blossom honey, gooseberry pie with meringue and bitter almond. The palate has vanilla, sweet sponge, gooseberry and ginger biscuits. The finish is long, nutty and woody.
