This Tomintoul was distilled in 2005 and bottled after 17 years at 46%. It was matured in ex-bourbon casks of American oak, then finished in Pedro Ximénez sherry butts from Fernando de Castilla in Andalusia. It is a limited distillery bottling of 9,870 bottles, without chill-filtration or added colour.
The nose has prunes and dates with sweet spice, dark sugar syrup and toasted oak. The palate is sweet and strong: maple syrup, candied nuts, citrus marmalade, salted caramel and chocolate ganache with cinnamon and cloves. The warming finish brings crunchy toffee and cocoa, moving towards dried figs and espresso.
