Tomintoul – Cognac Cask Finish

This is a small batch Speyside single malt from Tomintoul. It is first matured in ex-bourbon American oak casks, then married and finished in hand-selected Cognac casks from France. The nose is light and lifted, with chestnut, lemon rind, blossom honey and amaretti biscuits, plus hints of chamomile and fennel. On the palate come sweet choux pastry, Chantilly cream, sugared almonds, butterscotch, golden raisins and rolling tobacco. The finish carries white chocolate, panettone and nutmeg, fading into warming ginger spice.
