Bill Phil is a peated Irish single malt from W.D. O'Connell, made by triple distillation at the Great Northern Distillery in Dundalk and bottled at 47.5% in a 70cl bottle. It matured entirely in first-fill bourbon barrels and is non-chill-filtered, with no added colour. The name recalls William Philip O'Connell, great-grandfather of the founder, Daithí O'Connell. This blacksmith from County Limerick was known for a handmade turf cutter, the Bill Phil Sleán. Bill Phil appears in small, recurring batches. Bergamot and light peat smoke lead the nose, with poached pear and Earl Grey tea. The palate brings buttery biscuit, lightly smoked malt, banana bread and cassia, and the finish is long and gentle, with citrus oil and a hint of smoke.

About Glenbotal

The idea of Glenbotal came to us naturally: as whisky lovers, we were always on the lookout for new experiences in the whisky world. That’s why we created Glenbotal and became our very own first customers. We buy unique and hard to find spirits from ballots and private collections. Then, we share them with a small circle of friends and people who can appreciate a good dram.
