Westside Water Straight Bourbon is made from a mash of corn, rye and malted barley, which the makers settled on after trying dozens of versions. It comes in a 75cl bottle.
The spirit goes into new, charred American oak barrels at 130 proof and ages for two to three years. The barrels are then sampled, and those that pass are cut to 90 proof with California mountain water before bottling. The charring caramelises the natural sugars in the wood.
