WhistlePig Estate Oak Aged 15 Years is a straight rye whiskey, distilled in Alberta, Canada, then aged, finished and bottled by hand at WhistlePig's farm in Shoreham, Vermont. It is bottled at 46%.
After 15 years of ageing it is finished in custom barrels made from Vermont White Oak, harvested on the farm's own 500 acres. The wood has more growth rings than standard American oak, and the barrels are given custom toast and char profiles.
The nose is caramel, vanilla and oak with allspice and burnt orange. The palate is warm and slightly creamy, with butterscotch, baking spice, leather and a little tobacco, and the finish is very long, with toasted oak, vanilla and rye spice.
