WhistlePig The Béhôlden is a 21 year old North American single malt, bottled at 46% in a 750ml bottle. It was distilled from malted barley in copper pot stills and aged for 21 years in ex-bourbon American oak barrels. It then moved to WhistlePig's farm in Shoreham, Vermont, for a four week finish in former 10 year old WhistlePig rye barrels.
This is the Spring 2023 release, drawn from 18 barrels, and each bottle is individually numbered. It is described as the first super aged North American single malt.
The nose offers maple syrup, caramel and baked red apple with golden raisin and graham cracker. The palate is creamy, with maple, vanilla and honeyed malt moving to apricot and black cherry. The finish is long, with oak, praline and clove.
