Wuliangye Baijiu (50cl, 52%)

Wuliangye is a strong aroma (nongxiang) baijiu from Yibin in Sichuan, China, bottled at 52% in a 50cl bottle. It is named after its recipe of five grains: sorghum, glutinous rice, rice, wheat and corn. The spirit is fermented in old mud pits and aged in traditional ceramic vessels, which shape its distinctive aroma. The pits are said to have been in continuous use for centuries. The nose is bold and pungent, with fermented fruit, overripe banana, soy sauce and floral honey. On the palate, sweetness meets savoury notes of ripe peach, steamed rice and earthy umami. The finish is long, with toasted sesame, dried plum and a soft floral note.
