1792 Kentucky Straight Rye Whiskey (75cl, 50%)

1792 Kentucky Straight Rye is the first rye whiskey released by Barton 1792, a distillery previously known for its bourbon. Master Distiller Ross Cornelissen built it from three rye sources: Canadian rye for floral lift, rye from the northern United States for peppery spice, and European rye for bready, herbal depth. He used 1792's own bourbon yeast rather than a neutral one, to bring fruit-forward sweetness against the spice. It was distilled and barrelled at 125 proof, as with the bourbon, and bottled at 100 proof, where he felt the rye reached its peak. The nose offers warm baking spices and spiced fruit jellies. The palate moves to rye spice, cinnamon candy and molasses, and the finish closes on mulling spices and sweet oak.
