A Secret Islay Distillery 31 Year Old 1990

A single cask single malt from an undisclosed Islay distillery, aged 31 years. It was distilled in November 1990 and bottled in 2022, after more than three decades in wood. The colour is a deep mahogany. The nose opens with sooty smoke, burnt biscuits and roasted coffee, then moves to sticky toffee, dates and candied bacon. The body is dense and oily, with pungent peat smoke, tar and salted caramel, balanced by balsamic poached fruit, dark chocolate raisins and old oak. The finish is long and drying, with charcoal ash, cigar box spice and a salty coastal note.
