Ailsa Bay is a peated single malt from the Ailsa Bay distillery in the Lowlands, in a 70cl bottle. The distillery was founded in 2007 and uses the latest distilling technology.
Brian Kinsman and Peter Gordon used it to make a peated malt that was new to the Lowlands. It was the first whisky to state a peat level (PPPM) and a sweetness level (SPPM), and it is balanced between the two.
Part of its maturation takes place in quarter casks, small casks that speed up ageing through closer contact with the wood.
