Apogee XII 12 Year Old Pure Malt - Bimber Distillery (70cl, 46.3%)

Apogee XII is a blended malt from Bimber Distillery in London, bottled at 46.3% in a 70cl bottle. It brings together Scotch single malts from the Highlands and Speyside, each matured for at least twelve years. After the malts were married, they went into ex-bourbon casks that had previously held Bimber's own London Single Malt, which adds a fruity, spicy note. It is non-chill-filtered and of natural colour. The relief-patterned bottle recalls the hammered copper of Bimber's small stills. The nose offers spiced pears, baked apricot tarts and sugar sweets, with rosewater, nutmeg and ground ginger. On the palate come syrupy orchard and stone fruit, lightly charred oak, white pepper and mint. The finish is long, with ripe sweet fruit and aromatic oak.
