Bacoo 12 Year Old Rum (75cl, 40%)

Bacoo 12 Year Old Rum is made in the Dominican Republic by Alcoholes Finos Dominicanos from fresh-pressed sugarcane juice grown in the central part of the island. It is built from a blend of pot and column still distillates, aged for 12 years in the Dominican Republic's tropical climate in ex-bourbon barrels. Retailer descriptions include caramelized sugar, vanilla, banana and toasted oak on the nose, with dark caramel, toffee and baking spice on the palate, closing long and smooth with lingering molasses and gentle spice. Another describes toasted fig bread, spiced chocolate pistachio toffee, tres leche cake and crème brûlée, finishing with sarsaparilla, spumoni gelato, pink peppercorn, bitter bark and root notes and honeyed epazote.
