Baldoria Verdant Vermouth (75cl, 18%)

Baldoria Verdant is a herbaceous, citrus-led vermouth from Boves in Piedmont, bottled at 18% vol in a 75cl bottle. Its botanicals are macerated separately in neutral grain spirit with water and in wine, then blended and rested in steel tanks before light filtration. The recipe uses two wormwoods, sweet orange, genepy, chamomile, sorrel, lemon and hibiscus. Botanicals not grown in-house are foraged in the Alpine foothills with the local mountain community. The nose shows green apple, pear and lime zest, then sage, sorrel and forest floor. The palate is crisp and light, with rosemary, lemon peel tartness, a touch of honey and floral hibiscus. The finish is clean and dry, with wormwood and pine.
