Barber Lee Heirloom Corn is a bourbon from Barber Lee Spirits in Petaluma, California, bottled at 45% in a 75cl bottle. It is made from Bloody Butcher and Hopi Blue heirloom corn grown in California's Central Valley, with malted barley, malted rye and non-GMO yellow corn.
The spirit is double distilled in a custom copper pot still and aged for three to four years in new, heavy-char American oak barrels. Bloody Butcher is credited with spicy notes of buckwheat, chilli pepper and sweet cherry, and Hopi Blue with sweet, earthy richness.
The nose is sweet cherry and chilli-pepper spice over fresh oak. The palate has full texture, with fruit and spice and a drier character. The finish is earthy and sweet, with warm oak.
