This is an Irish single pot still whiskey from the Boann Distillery. The mash bill uses malted and unmalted barley, oats and rye, all grown in Ireland.
It first matured in 250-litre American oak Oloroso sherry hogsheads from Bodegas Garvey in Jerez de la Frontera, chosen with George Espie, formerly of The Macallan, and Ventura Nunez of the Vasyma cooperage. It was then finished in casks of over 500 litres that came from a Pedro Ximenez solera in use for more than 60 years, some made from chestnut wood. It is non-chill-filtered and uncoloured.
The nose offers raisins and figs with molasses, sweet caramel and a touch of leather. The palate is sweet and savoury, with honey syrup, dark chocolate, crisp bacon and cracked white pepper. The finish is long and rich, with earthy caramel.
