A single malt from Bonnington Distillery in Leith, Edinburgh, bottled at 46% in a 70cl bottle as a limited release.
The whisky was matured in Pedro Ximenez sherry casks. The distillery began production in March 2020, and its squat-neck stills are shaped to give a new make spirit that is more Highland in style than traditional Lowland.
The nose is sweet, with sugar, pick and mix, fresh oak and green wood. The palate brings subtle red fruit and a light dusting of sugar on berries. The finish is long, with plenty of wood and tannins and some salty notes.
