A white Burgundy made from Chardonnay grown on a 0.75 hectare parcel near Santenay, on mainly limestone subsoil. The grapes are harvested by hand and pressed directly on arrival at the cellar, without destemming. After a short settling, the must ferments spontaneously and slowly in large casks, then matures for 6 to 12 months depending on the vintage, half in stainless steel tanks and half in oak barrels. The wine is pale golden with a greenish tint, with anise, citrus fruit and green apple on the nose. It is compact at first, gaining velvet and softness with a little aeration, and finishes with discreet acidity and good minerality.
