Bushmills 30 Year Old Pedro Ximenez Sherry Cask Finish (75cl, 46%)

Bushmills 30 Year Old is a triple-distilled Irish single malt from the Old Bushmills Distillery in County Antrim, bottled at 46% in a 75cl bottle. The whiskey spent 14 years in bourbon barrels and sherry butts, then a further 16 years in first-fill Pedro Ximenez sherry casks. It is non-chill-filtered, and it became a permanent part of the core range to mark the 415th anniversary of Bushmills' 1608 licence. The nose is rich with dried fruit and toffee. The palate is velvety, with dates and figs followed by praline, citrus and vanilla, and the finish is very long, returning to dried fruit and toffee.
