Campari is an Italian bitter aperitivo created by Gaspare Campari in Novara in 1860. It is built on a proprietary blend of over 60 botanicals, with known contributors including chinotto citrus, cascarilla bark and bitter orange. The botanicals are first soaked in water for about two days, then combined with spirit and steeped in large maceration vats for roughly 15 days at lower proof to preserve bitter compounds. The result is vivid ruby red, boldly bitter and complex, with citrus peel and herbal depth. Production moved in 1904 to Sesto San Giovanni, just outside Milan, where it remains today.
