Caol Ila – 2016 10 Year Old 1st & 2nd-Fill Sherry Butt Finish Signatory Un-Chillfiltered Collection (70cl, 46%)

This is a 10-year-old Islay single malt from Caol Ila, distilled in 2016 and released in Signatory Vintage's Un-Chillfiltered Collection. It is bottled at 46% without chill filtration, in a 70cl bottle. The whisky was finished in first- and second-fill Oloroso sherry butts, which add dried-fruit richness to the distillery's smoky, maritime spirit. Raisins, dark fruit, toasted nuts and gentle spice appear alongside sea spray, citrus, mineral notes and clean peat smoke. On the palate, sweet dried fruit meets savoury smoke and pepper, leading to a lingering finish of coastal peat, dark fruit and warming oak spice.
