Chicken Cock Double Oaked is a Kentucky whiskey bottled at 46% in a 750ml bottle. It is produced at Bardstown Bourbon Company, for a brand that traces its origins to 1856 in Paris, Kentucky.
The spirit spends seven years in used barrels and is then finished in new white American oak, the reverse of the usual bourbon sequence. Because it does not mature in new charred oak from the start, it cannot be called bourbon. The mashbill is 70% corn, 21% rye and 9% malted barley.
The nose is caramelised sugar, toasted coconut and brown butter. The palate brings toffee, dark cherry, cocoa and baking spice. The finish is medium to long, with charred oak, leather and dark chocolate.
